Salmon with Mango-Avocado-Salsa
Serves 4:
For the Salsa:
1 mango
2 avocados
3 spring onions
1 tomato (deseeded)
½ lemon (juice)
olive oil
1 tablespoon white wine vinegar
salt
For the salmon:
4 salmon filets (each about 150-200g)
salt
pepper
some lemon juice
olive oil
fresh white bread
For the salsa, peel the mango and the avocados, halve them, remove the stones and cut them into small chunks (½ inch). Deseed the tomato and cut it into small pieces. Chop the spring onions. Put the vegetables and the mango into a bowl. Add the juice of half a lemon, some olive oil, the white wine vinegar and some salt. Use a wooden spoon to mix everything carefully.
Season the salmon filets with salt and pepper and sprinkle them with some lemon juice. Heat some olive oil in a pan and fry the filets on both sides. They should be well done, the flesh flake easily but still be juicy. Serve them with the salsa and some white bread.
