Today I will present you with a recipe that is not my own but that was created by my son Lukas, who is a university student in Vienna: Spaghetti with Ham and Arugula.
In my sons’ Viennese “student cuisine” quick and cheap recipes are to be called for. They always claim that they simply don’t have any time for cooking extravagant meals. I decided long ago that I wouldn’t ask them how they really spend their time. As a trusting mother I wholeheartedly assume that they keep themselves busy studying for university.
But I do know, though, that they do not miss out on meeting friends and partying. And so I was informed about a James Bond Party that took place in their flat in Vienna. After all, they had to bring the old Bond movies back to mind before the cinema release of the new James Bond.
He found the design for a great invitation card on www.kartenmacherei.at and decided to treat his friends with some fine food, his spaghetti with ham and arugula.
I couldn’t get hold of any photos of the party itself 😉 but he gave me the photos of the spaghetti instead.
Spaghetti with Ham and Arugula
Serves 4:
1 lb (500 g) spaghetti
¾ – 1 lb (400 g) cherry tomatoes
3 large spring onions
2 cloves or garlic
½ – 1 chili
some olive oil
1/3 lb (170 g) Serrano ham or Prosciutto di Parma
¼ lb (100 g) arugula
salt, pepper
4 tablespoons grated parmesan cheese
Cook the spaghetti al dente (according to the instructions on the package). They should still have a slightly firm center.
Trim the root ends of the spring onions and chop them. Peel the garlic cloves, remove the seeds of the chili and chop both. Wash the cherry tomatoes and halve them.
Heat the oil in a large pan and fry the spring onions, garlic and chili. Add the cherry tomatoes and cook them for about 1-2 minutes. Put the drained spaghetti into the pan and carefully mix them with the tomatoes.
Cut or tear smaller pieces of the ham and add the ham together with the arugula.
Season with salt and pepper and serve at once with some grated parmesan cheese on top.
